KOLBI
Kolbi is hard cheese made from pasteurized cow’s milk. It is similar in flavor to Cheddar and soft texture without eyes and with rare cracks. Kolbi has slightly bitter, acidic taste; color is from bright yellow to orange. The time of full aging is up to 6 months. It is also sold fresh or half aged. The shape is cylindrical or rectangular brick of different weights and is coated with latex or wax.
