LACTIC


This cheese is produced under Chevre trademark, with a traditional French technology using goat milk. It may be shaped as a disk, a cone, a hearts, etc. The weight ranges from 50 to 150 grams. It is covered with soft white rind of Geotrichum Candidum. The consistency is soft when the cheese is young and becomes semi-hard after 1.5 months of ripening. There are no holes, the color is white, but after 1-1.5 months of ripening becomes pale brown. Fresh cheese has a fresh lactic taste with a tone of acidity, and becomes sharper and slightly sour as the cheese ripens. May be consumed fresh after 1-2 weeks of ripening, mature after 3-6 weeks and overripe after 1.5 months. Packaged in wicker baskets or transparent plastic film.
