MOZZARELLA


The curd made from pasteurized cow milk is melted, stretched and kneaded into round or oval lumps of different sizes. Wet, shining white cheese is packaged, along with some whey, in plastic bags or polymer film. Mozzarella used for pizza is kneaded into blocks and packaged in film. The consistency is homogeneous, but not spongy, and moist. It has a soft pleasant taste and flavor. Mozzarella is a fresh cheese and should be consumed within several days after manufacturing.
