PEMAGGIO
This is a feta type cheese in brine made from sheep milk. The color is white, the texture is soft, tender, slightly brittle, without holes. The taste is slightly sweet ant nutty. Ripened cheese has a strong lactic taste with tones of acidity. Ready to be consumed after 10 days if made from pasteurized milk and at least sixty days if made from raw milk. Shaped in bricks, packaged in plastic containers with brine with a net a weight of 1 or 7 kg; also comes vacuum-packed. This cheese may be soaked in cold water or milk before eating extra salt.
