BLUE CHEESE
This soft cheese, made from a mixture of cow and sheep milk, contains Penicillium Roqueforti. The characteristic savory taste and aroma of this cheese is due to this molding, which is evenly distributed in the body of the cheese 1.5 cm away from the rind. The color ranges from white to pale yellow with green-blue veins of molding the consistency is oily, slightly brittle. The surface is soft, with closed punctures. It is shaped into 10-12 cm high drums with a diameter of 18-20 cm. The weight is 2.2-3 kg. Packaged in foil. Ripens in 1.5 months.
