The cheese is produced from pasteurized cow’s milk, has flexible hard texture with evenly scattered small eyes. The cheese is produced with the technology similar to Gouda. The paste is yellow in color. The flavor and taste are fresh, with slight sharpness and acidity and with a hint of bitter almond. The cheese has a regular cylindrical shape; the head weight is 2.0-2.5 kg. It is coated with orange colored latex and is aged in 2 months. If aged 6-8 months the taste becomes more pronounced and sharper.
